Just for fun. . .

Also, the boys have been helping me make German pancakes in the morning. It is a recipe from my Aunt Bev and we've had a lot of fun with it. They are quick & easy & yummy!

RECIPE:
2 Tbs. Butter
2 Eggs
1/2 cup Milk
1/2 cup Flour
1/4 t salt
Pre-heat oven to 400 degrees, put butter in pie tin and melt in oven.
In a bowl, lighly beat eggs, mix in milk, flour, & salt until mixed. Do
not overmix or pancake may not puff. Pull pie tin out, tip pan &
swirl melted butter around so pan is coated. Pour mixture into
pan. Bake for 20-25 minutes. Pancake will puff and puffed edges
turn golden brown. Dust with powdered sugar.
TOPPINGS: We like to mix a yogurt with a spoonful of sour cream and fresh or
thawed fruit. Can also be served with syrup or jam. I usually cut it like a pizza
for the boys and let them dip it in the topping.

NOTE: I usually double the recipe and do two pie tins to feed all of us.

I don't know that I'm that great of a mom, I only cook once a day so that's the only meal they get :)

Yeah, my kids always get breakfast. I should tell them they're lucky to get one meal! (Of course I haven't made dinner since Friday!) We also love German pancakes. I make them in a 9 x 13, but it would be fun to cut them like a pizza--good idea!
